Once upon a time, we were fans of Teriyaki Boy. We always ordered an appetizer that consisted of quick-fried eggplant steeped in sauce.
We don’t go to Teriyaki Boy anymore. We haven’t in years. The photo above was taken the last time we ate there — ten years ago today. The food and service have deteriorated too much. I’m not even sure there is still a Teriyaki Boy.
But I’ve learned to cook the eggplant dish we used to love there. Or a version of it. Better, I think.
